I made this Lemongrass and Tamarind Beef the other night after I discovered I had some lemon grass growing in the garden and to answer your question yes its been awhile in the garden.

I found this recipe on a app dont ask me which one the 5:2 recipe app I think either way it was quick easy and the boys ate everything on their plate. Literally took 12 minutes from start to finish which is exactly what you want after you have been in the garden all day.

No image? Well I couldnt find one, tried taking one of my own but then if you saw that then you may not consider making it.

Oh and you can find Tamarind paste in the Asian section of your supermarket its a little sweet and tart at the same time just so you know..

Lemongrass and Tamarind Beef

What you will need:

  • 1 tablespoon oil

  • 500g (1lb) lean beef, cut into strips

  • 2 lemongrass stalks, chopped (I chopped in larger pieces so I could fish them out before serving- my kids wouldnt eat them)

  • 6 shallots, chopped

  • 2 green chilies, chopped (opitional- I didnt add)

  • 3 tablespoons tamarind paste

  • 2 tablespoons lime juice

  • 2 teaspoons Thai fish sauce

  • 2 teaspoons brown sugar

  • 200g (7oz) shredded green papaya (subsitute for beans if you dont have I did)

** If you would like it saucier as my kids do add a teaspoon or so of cornflour, a beef cube and 250 mls of water and add that at step 3**

How to:

  1. Heat the oil in a wok or frying pan, toss in the meat and cook over a high heat for 2-3 minutes.

  2. Add the lemongrass, shallots and chilies and stir-fry for a further 5 minutes or until the meat is well browned.

  3. Add the tamarind paste, lime juice, fish sauce, sugar and papaya and stir-fry for a further 4 minutes.

  4. Serve immediately, if liked, with rice and a salad.

Enjoy sweets..would be perfect cold and thrown through some Asian Salad Greens and rice noodles….yum.
