I’m trying a new post series because I thought it might be fun just writing up our menu plan for the week.
Its the last week of school before the September holidays start the boys are all super tired especially B2 who seems to be going through another growth spurt. You can always tell when he is going through a growth spurt because he is quick to cry and is easily overwhelmed. Its usually after the fact that I have seen what is going and have already whinged at him to ‘come on’ but I got this parenting thing happening these days simply because I have slowed down, taken in the signs, put two and two together and listened to the sound of their childhood.
Growing up, growing in and just growing is crazy on their wee bodies; { hearing myself say that out loud makes me wonder who am I but its true} is hard work.
I’m just glad I caught myself early so dinners this week are super calm and full of good stuff.
Mondays I don’t work so a nice full meat and three veg is always on the table. Unusually the table is laid in full and even though we still aren’t eating before 630 because of the final swim pick up its relaxed because I’m ready. This week its steak and this potato bake.
Tuesday is a pasta dish for sure. I work and we are still running around until the sun goes down. I make double of whatever dish is on so they can take leftovers to school. This week it’s our favourite sausage casserole. Technically a casserole but I cook up some of the large rigatoni and throw it threw with some pasta water.
Wednesday despite no activities sees us helping the husband at a job site this week. He is clearing a house and getting it ready for auction. Its all hands on deck and so I have prepared the vegetables and meat for Japanese beef bowl a new favourite since visiting Japan last December. I always add extra vegetables like bok choy, broccoli and carrot. This is a recipe I started with before creating my own – which I haven’t written down yet.
Thursday is eat out for the boys this week actually Thursday is our new take away night. I am usually running B2 to the city for basketball training and so whilst the boys eat out I get to have a favourite a budda bowl. It uses all the salad stuff that might be ready to ‘wilt’ also means it can be packed in a container and taken with me in the car.
Friday is no work for me but the start of the boy’s social calendar as opposed to the sports calendar. B1 has his youth group and the two youngest club night both starting at 630. It’s always an easy dinner night. This week its chicken soup I need to use the chicken that the boys have left over from school lunches and the vegetables that are rolling around in the bottom of the fridge. Nothing goes to waste here.
I try and prepare all of these dishes if not make them on Sundays or Monday mornings if I can but would love to know what you think.
