a fifo wife {fifo life: bake it: vanilla butter biscuits}

Monday and Friday has become baking day for me. Its the perfect way to entertain B3 for half an hour and so found another super easy recipe for an old favourite and so easy to make with the kids.

Vanilla Butter Biscuits

What you will need:

125g unsalted butter cubed at room temp

1/3 cup of sugar (caster if you have it)

1tsp vanilla essence

3/4 cup of self raising flour

2/3 cup of plain flour

2 tsp milk

How To:

Cream butter sugar and vanilla essence in a mixer until sugar is dissolved.

Sift the flours together.

Add half the combined flours and butter mixture together and mix well. Add milk.

Add the remaining flour and when mix becomes to difficult to mix with spoon use your hand. Mix with your hand until the mixture forms a soft dough that leaves the sides of the bowl and doesn’t stick to your hands. If the mixture is a little dry add and additional teaspoon of milk.  (there should be no dry bits on the bottom of the bowl)

Roll tablespoons of the dough into balls and place about 4cm apart on a lined tray. Dip a fork into a little flour and flatten the biscuits slightly. Place in the fridge to chill for 20 minutes before placing in the oven at 160 degrees for 20 minutes or until the biscuits rise and are slightly cracked on the top and are light and golden underneath.

Remove the biscuits from the oven and set aside for a few minutes before placing on to a wire rack to cool completely.

Perfect with a good coffee.

  2. I woke up this morning (being a Saturday) heard the rain and thought about these biscuits. They are now cooling on the rack smelling delicious! My 2yr old has already stolen one and I am waiting patiently for the kettle to boil because as per instructions, they will be perfect with a cup of coffee. So thank you – my kitchen smells fabulous! 🙂

  3. Oh yum. This is a great recipe!! My eldest has lots of allergies an he can actually have everything in this!!! Jam drops are a favorite in this household!!
