Have just spent the afternoon changing my lounge room around…after one of my canine children peed on the rug…me not a happy camper…but she got locked inside all night by mistake…so somewhat of an excuse? But hey I dont have anything else to do huh… Anyway Im so happy with the results that is makes me wonder why I didnt do it sooner..so with this as inspiration Im going to tackle my hallway with some long awaited frames and mirrors. If the result is anything remarkable I’ll post you some pictures.

a fifo wife {10th March…officall FIFO wife day}

Okay so we have mother’s day, father’s day, red nose day, valentine’s day there is a day for everyone and everything but what about FIFO wife day? A day for us to be pampered, rested or just sit  and do whatever we like because when we aren’t being a mum we are being dad, the plumber, the electrician, the accountant and every other hat wearing professional and tradesman possible. We are the ultimate multi taskers.

Here’s the plan FIFO wife day is a day where you can kick up your heels or lay horizontal all day if you so desire whilst someone else does the hard yards for you. You don’t have to give money, raise money, just do nothing but PLEASE YOUR SELF. Simple. Whether it’s all day or just fifteen minutes for the day it’s okay because on FIFO wife day its allowed it’s an official day I said so. So what do you think sounds good huh?

SO in honour of all us FIFO wives I’m nominating FIFO wife day 10th of March and to celebrate that (and my impending 35th birthday to which I had chosen the 4th…which is also my birthday..for those that wish to write that down..lol.. but it seems its clean up Australia day and that’s just not fair) I’m giving away a $50.00 gift voucher to Ella Bache for you to do with what you like and whatever else I can round up…(I know its not massive but its out of my own little pocket and Im afraid with three dogs and four kids and one husband the pockets aren’t that deep). a fifo wife {recipe: Debbies beef pho soup}

Last winter I was craving the noodle soup that was/is my diet when I was in Darwin..beef pho soup (pronounced fuh). Its a Vietnamese noodle soup that in Vietnam is had breakfast, lunch and dinner. This is a recipe that I ‘put together’ after googling the ingredients.

Its my version its not traditional by any means and Im not even sure that the measurments are right I sort have guessed them I go by tatse.

This is also a soup that my B2 and B3 love….much to my surprise  and I made a big batch over the weekend.

Debbie’s Vietnam beef pho soup

What you will need:

  • 10 cups of water
  • 2 beef stock cubes ( I use massel brand)
  • 1 cinnamon stick
  • 2 star anise
  • 2 cardamond pods
  • 1 tbs lime juice (if you dont lime juice dont stress…its optional)
  • 2 tbs fish sauce
  • 375g pkt rice noodles
  • 650g beef fillet, excess fat trimmed sliced finely. Thinner the better partially frozen is best.
  • 200g bean sprouts
  • 4 green onions, ends trimmed, thinly sliced diagonally
  • 2-4 small fresh red chillies (or to taste), thinly sliced (optional)
  • 1 cup celery
  • sweet chilli sauce for serving optional..add to your own taste
  • soya sauce for serving optional..add to your own taste

(and you could add finely sliced carrots or capsicum, bok choy also if you wanted)

How to:

  1. Combine beef stock cubes and water, cinnamon stick, cardamon pods and star anise in a medium saucepan over high heat. Bring to the boil. Reduce heat to medium and simmer for 5 minutes or until aromatic. Stir in lime juice and fish sauce.
  2. Cook rice noodles in a large pan of boiling water until just tender. Drain well.
  3. Slice beef into thin slices. I dont actually cook my beef. slice it so thin that the broth cooks it but just incase that freaks you out this is an alternative. Heat a barbecue or chargrill pan on high. Lightly oil barbecue. Add 1/3 of the beef and cook for 1 minute each side for rare or until cooked to your liking. Transfer to a plate. Cook remaining beef in 2 more batches.
  4. Divide noodles among serving bowls. Top with bean sprouts, green onion, chilli, cerlery and beef. Pour over hot stock and serve with extra lime, chilli, soya, sweet chilli and fish sauce.

a fifo wife {a fifo life: weekends and a park crawl}

So we all know how much I (don’t) love the weekends they completely throw a spanner in the routine they do and this weekend was no different. I guess that will change once the boys start activities on the weekend and then I will just hate the school holidays then. So this week whilst I was musing about my misspent youth (now that I’m almost thirty freaking five) and how often I would pub crawl on a Saturday night compared to the now; Saturday nights and Scooby and the gang, I had an idea.  A park crawl. A park crawl as opposed to a pub crawl. Not as equally exciting or as intoxicating for me but fun all the same. A park crawl. A perfect way to spend a fantastic summers day; a perfect way to fill in another day until FIFO  husband is home.

There are some fantastic parks (some with some great walking tracks) in the area so I picked four including one skate park (the only one in the area for us) which would be good for bigger kids should you also decide to have a park crawl of your own. I packed breakfast, morning tea and lunch, so a little planning is required as is packing the car of scooters. I didn’t tell the boys just piled them into the car as soon as they woke. We went so early to get to the skate park before the bigger kids got there and my boys got it in the way and before it go to hot. I will say despite the typical stereotype image of skater kids I have met so many nice kids there polite and well mannered any mum would be proud. However my boys attempting to do there tricks not matter how cute to me is nothing but painful for a teenager.

We went from park to park picnicking breakfast, morning tea and lunch (my favourite part). The boys had a ball. I got to read a little when I wasn’t playing and some in depth discussions where had over cold pizza. I loved it. I was told over and over again they loved me. The planning was well worth it. The best part some lessons were learnt thanks to watching other naughty children…now boys that’s why we don’t hit each other with sticks and that’s what happens when some mum’s don’t get cranky enough. So the boys played and played till they could play no more and I have woken this morning without a hangover. Perfect, I can’t wait to-do it again when fife husband is home.

a fifo wife {a fifo wife: tell me again}

Tell me again what we are doing this for? Happiness, stability, security, to be able to retire by the time we {fifo husband} is forty? No. Its paris. Paris Paris Paris. I want to to go.. well… I have been yes I have been and I loved it. Fifo husband loved it and I want too go again. For awhile and by that I mean months maybe a year. I want to take my kids there to attend school so they can have french school lunches….lol..

Its been my dream since we went back in 2004…oh that seems so long ago….thats a lifetime ago. That was my self indulgent dream for me and now what I want for us is to be the first one to show my boys the world…thats my plan..I want to show them the world. Good and bad. It will happen. I know it will happen but in the mean time I sit and look at pictures like these and imagine myself there. Imagine my boys there. Imagine fifo husband and I there. It will happen and I cant wait.
