a fifo wife {recipe: salt and pepper seafood)

This is a really nice quick weekend dish that my boys love that we do alot when FIFO husband is away….I sometimes purchase the marinara mix from Woolies when its on special and use that (i pick out all the mussels mind you) but otherwise I the following.

What you will need:

The same rules apply..I don’t know the measurements its all about taste.

  • 1 cup of corn flour or plain flour will do
  • 2 tsp freshly ground black pepper
  • 1 tsp salt
  • 3 medium cleaned squid hoods, cut into 5mm-thick rings or cut diagonally into bite size pieces 9around 4cm) and scored on one side
  • 1 fillet of your favourite white flesh fish cut into bite sized chunks
  • 300g of prawns shelled and de veined
  • 1/2 cup vegetable oil

How to:

  • Place the flour, pepper and salt in a clean plastic bag. Add the fish, prawns and squid rings and tie the bag to seal. Shake the bag until the squid is fully coated in the flour mixture and set aside.
  • Heat the oil in a large non-stick frying pan over high heat (I use a wok the heat is much better). Cook the fish, prawns and squid, turning occasionally, for 2-3 minutes or until golden brown and just cooked through

I serve mine with tossed baby asian greens in soy and sweet chill sauce and some jasmine rice.

a fifo wife {me: technology not so savvy}

I’m not so savvy at technology..its all very much trial and error its a wonder I can turn on the washing machine…hmm valid excuse heard it before.

a fifo wife {recipe: FIFO husbands pancakes}

We make pancakes every time there is something special about the day ahead. So this month there was a lot of pancakes. There is just something so wonderfully lazy about pancakes. Christmas, Easter birthdays is a our usual occassion but I know its a good day when he whips me up one of these out of the blue. Here is his recipe. For a larger batch just double the mix.

What you will need:

1 cup of self raising flour

1 egg

1 cup of milk

1/3 cup of sugar

splash of vanilla essence

butter for frying

dash of oil for frying (helps stop the butter from burning)

How to:

Mix all the dry ingredients together. Then mix all the wet ingredients together and then mix to a smooth batter.

FIFO husband likes the batter to sit for about half an hour but if you don’t have the time you don’t have the time.

Place the butter in the pan with a dash of oil allow to melt and get to a medium heat. Ladle pancake batter into the pan and wait for little bubbles to appear on top of the pancake before flipping them over to do the other side. If you are unsure lift the edge with a fork to see if they are a golden brown.

Ta da done.

Serve with butter and maple syrup or my FIFO husbands favourite freshly squeezed lemon juice and sugar.

a fifo wife {me: what does that do mum?}

I have these little beauties in my store. They were around when I was a kid so they aren’t that old but I had some friends and their kids over yesterday and they couldn’t quite understand how it all worked. How do you put the numbers in mum? The confusion was priceless and the delight of them watching the dial in amazement was worth a giggle. Loved it.

Well friends FIFO husband is off to Singapore today so down the to the city we go lucky bugger to a degree….its been a good month…he has looked after me well..as he should I say..lol.
