My husband brought me a new recipe book this swing home- Afternoon teas. Its a Woman Weekly book and this recipe is an adaptation of an Apple and Cinnamon tea loaf that I found. I have played with it a little and changed it a wee bit including the tin- I didn’t have a small enough loaf tin so changed out for the standard 20 cm tin. Its so easy and perfectly fluffy. Cooking time may vary a little.

Apple Cinnamon Tea Cake.

What you will need: 

90g butter softened

1 teaspoon vanilla extract

1/2 cup castor sugar

1 egg

1 1/3 self raising flour

1/2 cup milk

1 medium apple cored and sliced thinly

15g butter melted

1 tbs white sugar (ordinary granulated)

1/2 tsp ground cinnamon

2 tsp honey

1/4 tsp ground ginger

How to:

Pre heat oven 180’C. Grease 20 cm tin.

Beat softened butter, vanilla and caster sugar in small bowl until light and fluffy.

Add egg and honey beat until combined. Stir in sifted flour, ginger and milk in two batches.

Pour mixture into pan, top with apple, brush with melted butter, sprinkle with white sugar and cinnamon.

Bake for 30-40 minutes or until when skewered skewer comes out clean. Sprinkle with the remaining sugar and cinnamon.

Stand for 5 minutes and serve warm with whipped cream.
