This is not an authentic recipe but its easy quick and yum..you could also do this with beef.
What you will need:
500 g of chicken thight fillet or breast (your choice)
1 tbls of peanut oil
1 clove of garlic
1 small chilli thinly sliced (optional)
1 squeeze of lime juice
2-3 teaspoon of curry powder
1 tablespoonof soy sauce
2 heaped teaspoon of crunchy peanut butter
250 ml of coconut milk
2 tablespoon of coriander
How to:
1. Heat pan, add oil, onions, chilli garlic, and curry powder cook for one minute.
2. Add chicken and cook until brown.
3. Add soy sauce, coconut milk, lime juice and peanut butter and stir until smooth.
4. Reduce heat and simmer for 5 minutes.
5. Stir in coriander and serve.
Serve with rice and steamed vegetables.
